This is the first entry in a series that will consist of recipes I invented because I forgot to go shopping.

Ingredients:
8 medium eggs
One package of taco seasoning mix
2 cups frozen hashbrowns
half an onion, diced
half a green pepper, diced
butter or margarine
salsa
grated cheddar cheese

Combine the eggs and the taco seasoning mix with a wire whisk. Look at the color it turns and doubt that this was such a bright idea. Oh well, too late now, you’re not about to dump the eggs down the drain, are you? Sautée the hashbrowns, onion and green pepper over medium heat in a little butter or margarine until hashbrowns are brown and veggies are soft. Transfer to a plate. Add a little more butter and cook the eggs until set. Add the hashbrown mixture, some salsa and some grated cheese back into pan and stir. Heat until cheese is melty. Serves 2 or 3.
